What is your content directory? If it is on a mountable drive, the drive might not be mounted when MinimServer starts. You can set the delayStart property to fix this.

startx is the way of starting the RPi3's desktop GUI from the command line.
I've now edited the /etc/fstab file so that my USB drive is mounted at power up/reboot and this sorts my (not minimserver's) problem with the content directory not being found when minimserver is started.
