Hmmm from my point of view;
1.) If you only use Bubble with the tablet in your local WLAN
2.) Uninstall / disable all other apps ( I know not possible for all apps)
3.) All settings of the tablet to the most secure and privacy choice
It should not be a big risk without security updates and you can use an "older" and cheaper tablet (or an older phablet).

Just my point of view...
