I'm not sure what you mean by "listed under Unknown Album". Are you referring to the [no album] index in the Tag View list of albums, or is this something you are seeing in the folder view?

I'm also not sure what you mean by items getting sorted by Title before Artist. In the folder view, there is no sorting by artist.

The scheme of grouping songs by album in the folder view shouldn't cause a problem if the Album tag is missing. Any songs without an Album tag should be grouped together after all the album groups and sorted by Title. Is this what you are seeing?

I am using BuppleUPnP as control point, which displays an empty album tag as "Unknown Album". Yes, all the songs without an Album tag are grouped together after all the album groups and sorted by Title. I realise that there is no option to sort by artist, but I prefer sorting by artist (then title), not title. That's just me. An option to set the sorting order myself would be a nice-to-have addition.

TVersity has been my preferred media server, but since I am only streaming audio (no videos and images), I have been trying MinimServer. It takes a bit longer to set up, but I like its better customisation options.

TVersity sorts the items by file name in Folder view, which I find ideal. I also like that it runs as a service.

In MinimServer update 25, you can specify a list of tags to use for sorting the items in a folder.
