MinimServer handles multiple genres as you would like it to do. When you restrict by the first genre, you will still see a Genre menu choice if the remaining files have other genre tags with different values. You can do this any number of times until you are left with a set of files with identical genre tag values, at which point the Genre menu choice will no longer be shown.
