Profiles vs multiple instances

is there a best practice or preference to setting up multiple profiles vs multiple instance/servers ?
For me, i have several albums that i've ripped from SACD that have both the stereo and multi channel and i may listen to them in either my hometheater room (multi-channel) or my streaming stereo setup. I know i can tag, but them i'm having to display that tag in the profile and browse through to it.

I could also organize my folders so that only my multi channel music would be in one high level folder and my stereo in another and setup multiple servers/instances with single content directories.

what are the pros/cons of either setup?

Also, Bravo Simoncn for the ability to have this choice.
