It appears that you have uninstalled the current MinimServer update (update 134). The serverOptions property was introduced in update 123, so either update 123 or a later update is needed to be able to use this property. To reinstall update 134, you can use the install and relaunch commands:

install minimserver-0.8-update-134
relaunch

Update 134 is installed automatically by default when MinimServer is started (if there is an internet connection) but this does not happen if this update has been uninstalled by the user. This is to enable the user to uninstall an update (if this is necessary for any reason) without MinimServer reinstalling the update contrary to the user's wishes.
