Any chance the UDN of that instance has changed since you last used Hi-Fi Cast? If so that would explain what you're seeing. Hi-Fi Cast will list all the servers that it has just discovered as well as those that you have previously selected in the app.

BTW. The last (and only) time I've heard of a discovery problem like adrian's (including problems with Chromecasts and inconsistent behaviour between different apps and devices), a reboot of the router fixed things.
