EDIT: I jut found a solution which is not the best I can imagine, but it works. I remembered that we have here an old iPOd touch with iOS 6, we didn’t use for a long time. Apple damaged the music app and the iTunes remote with iOS 7, when the idea »function follows design« became central for all this company does. But with iOS 6 it is quite fine to use Airplay. At least I can chose the composer and get a list of albums, not list of all tracks associated with this composer. That’s a smaller step back and a huge one forward
(Now I understand why I didn’t know this problem before: I didn’t update to iOS 7 until september (and this was an error), and was very busy the last time so that I had no chance to think about those strange gaps which weren’t there before...
Anyway: I’d prefer a solution with DLNA, because I like Minim Server. May be in my next live...
