I only use Folder View as my way of cataloguing and finding files. I find it by far the simplest way to find my stuff and I personally don't need genre artist etc. So I've turned them all off; no problem
But is it possible to rename folder view to something else, "the files" for example?
I realize it's just the nerd in me and it's no big deal but if it's possible I'd like to

I have moved this thread to the Support section of the forum as the question is about MinimServer rather than music tagging.
It isn't possible to rename the [folder view] menu item at present.

Really enjoying using Minim Server 2 at the moment. Is the above thread from 2017 still correct re: you cannot change the name of the [folder view] menu item?

There has been a change to this since 2017. In MinimServer 2, the term "folder view" is automatically translated into the system language (English, French, German, etc.) It is possible to customise this translation for any language (including English) by following the instructions in this section.
