On OS X and on LInux MInt, nothing is specified, then I understand it use ffmpeg?

If nothing is specified, there is no stream converter program available for MinimStreamer to use. Please see this section for details of how to download and install ffmpeg as your stream converter program.

I convert flac to wav, like this : flac:wav (stream.transcode)
Perhaps it has nothing to do with stream.converter.

Yes, as it says in this section, flac:wav transcoding does not use a stream converter program.
